We went in 5 or 6 stores while I was OCing and we didnt have any problems (we never have). We then went over to the TGI Friday's at Chambers and Parker for lunch. It was only 11:15 so there werent very many people. They seated us but then the manager came up to our table and asked me if I had a permit to carry my gun. I briefly explained the law and that no permit was required for OC. He was fine with that, but he said if another customer complained he would ask us to leave.

You could have said, "so you are threatening to breach our implied contract?"

I cannot find in Colorado State Statutes where there are any references to open carry.

If you have a link to such a resource, please provide it, I'll continue to look in the meantime.

There is one reference to OC.

CRS 29-11.7-104. Regulation - carrying - posting.

A local government may enact an ordinance, regulation, or other law that prohibits the open carrying of a firearm in a building or specific area within the local government's jurisdiction. If a local government enacts an ordinance, regulation, or other law that prohibits the open carrying of a firearm in a building or specific area, the local government shall post signs at the public entrances to the building or specific area informing persons that the open carrying of firearms is prohibited in the building or specific area.

You can see the text above at http://198.187.128.12/colorado/lpext.dll?f=templates&fn=fs-main.htm&2.0

(the official website for CRSs, but it's not up right now)

Denver is the only city that can impose a general ban on OC contrary to state law, because of an  infamous court case.
